On this game cookery course, George Pascoe will take you through the skills necessary to prepare and cook a variety of delicious game dishes.
This is a hands on course where you will be preparing, cooking, sampling and tasting a number of different types of game. A delicious lunch is include in the price of the course.
Welcome: Meet your host and tutor, see for yourself the Philleigh Way farmhouse cookery school and garden. Enjoy a morning tea or coffee and tasty Philleigh Way treat.
Practical session one: We kick off with venison – there will be a practical interactive session where the group will learn all about the various different types of deer that inhabit our countryside. During the session the group will butcher down a whole venison carcass learning the techniques of gutting, skinning and jointing.
Demo one: How to get the best from venison, you will learn the most beneficial methods of preparing and cooking venison and watch George Pascoe put those techniques in to practise.
Demo two: Game terrine, the students get to learn the different techniques and methods of making the perfect game terrine.
Practical session two: The students make their own game terrine to take home at the end of the day.
Demo three: Pheasant is next on the agenda, many struggle to get the best out of this tasty bird often ending up with dry, stringy tasteless meat. George will put those days behind you showing you simple but effective methods of cooking pheasant to ensure a tasty succulent dish.
Practical session three: Following the demonstration the students will get to skin joint and prepare their own delicious pheasant dish utilising the whole bird.
Demonstration four: Other game birds – the final session is subject to change depending on what game is available locally but could cover game birds such as woodcock, partridge or snipe.
Practical session four: If time allows the students will get to recreate the dish prepared by George in the previous demonstration.
We finish the day with a hearty game inspired late lunch washed down with a glass of good red wine!

Age: We would advise that this course is only really suitable for 12 years of age and upwards. Under 16s must be accompanied by an adult.
