Indian Feast Night at Philleigh Way

For one night only in July, Philleigh Way Cookery School is putting an India spin on one of their Woodfired Sessions.  Ben Martin and Jasmine Sharma from the Maha Masala Spice Company will be cooking up a feast of Indian delights on the Philleigh Way outdoor wood grills and oven. Ben and Jasmine will be cooking a range of authentic spiced Indian food over fire, taking inspiration from the ancient tandoor tradition. Each dish will be delicately flavoured with rubs and marinades made from the highest quality spices imported directly from Indian spice farmers and blended in Cornwall. The food will all be cooked over English oak sourced from Philleigh Way’s sustainable woodland.

You can expect a tantilizing menu of Indian delights such as; Bhutta Challi, Tandoori Jeera Piaz,Baingan Bharta, Aloo
Kadai Masala, Goat Sule’ (Penweathers Farm goat cooked on skewers, marinated in aromatic spices and finished in smoke using an age-old Indian charcoal method ‘Dhungar’), Chicken Reshmi Tikka, Lamb GilawatiKebab, Spatchcock Tandoori Chicken, Gobi Mussallam, Mithai (Indian Sweets) and Kulfi (Indian ice cream).


 

Delicious desserts at Philleigh Way

Would you like to wow your friends and family with extravagant desserts made using modern techniques and specialist ingredients? During Philleigh Ways new desserts course, you’ll learn a variety of skills used by today’s top chefs including foams, gels and chocolate work as well as mastering traditional skills including how to prepare the perfect pastry. During this hands-on day course, Philleigh Way will give you the skills and confidence to prepare a wide range of show-stopping desserts! If you have a sweet tooth, this course is a must!

Sample dishes; Kaffir Lime & Chocolate Tart – candied  & crisp limes – pistachio crumb – crème  fraiche & spun sugar, Strawberry & White Chocolate Mousse – chocolate soil – chocolate snaps – strawberry gel, Dark Chocolate Collar – Baileys mousse – vanilla foam – hand dipped truffles, Caramelized Rum Banana – compressed pineapple – meringue – golden raisins, Cherry Jelly – coconut tuille –  Baked Alaska coconut – pickled cherries – griotine foam.

Skills covered will include; tempering chocolate, spun sugar work, using a vacuum to infuse flavours, creating foams and gels, using aeration to prepare meringues

Weber Seafood Barbecue Course Philleigh Way!

If you love delectable flavours of seafood, this barbecue course at Philleigh Way Cookery School is a must. You’ll learn a variety of different skills such as how to grill, bake and smoke on the barbecue, how to use Weber's "lid-on" cooking techniques, as well as essential fish preparation skills and recipe inspiration!

During the half-day course, you’ll get to prepare a wide variety of different dishes using a combination of charcoal and gas barbecues. You'll be taught skills from lighting techniques to controlling temperature and how to know when your food is perfectly cooked.  

Sample dishes covered during the course; Fish tacos, smoked garlic butter mussels, seared tuna steak, grilled whole fish with garlic and lemon, curried king prawn and potato kebabs, herb and fennel salad as well as a delicious dessert of rotisserie pineapple upside down cake!
