New Oyster Aficionado Masterclass at Philleigh Way

Cornish cookery school dives deep into to the mysterious world of oyster.

Cornwall, Friday 16th January 2015: Next generation farmhouse cookery school, Philleigh Way has created a new Oyster Aficionado Masterclass in collaboration with Cornish born oyster expert, Katy Davidson who runs Mangez Moi and The Oyster Academy.

 

The course is designed to show students just how diverse the simple oyster can be, and to provide the ultimate in oyster shucking tuition.

Cornwall is home to some of the UK's most famous oyster beds, from the historic native oyster beds in Falmouth to the award winning rock oysters from the Camel Estuary.

During this hands-on day course, Katy will guide students through a shucking masterclass on both native and rock oysters, taste education and the comparisons of the two species before demonstrating some of her signature dishes using fresh oysters including steak and oyster pie. Students will then be able to have a go at re-creating the dishes themselves. By the end of the course, students will have a thorough insight into the geography, gastronomy, history and culture of the oyster.

Philleigh Way resident chef and fifth generation at Court Farm, George Pascoe said: "We are delighted to welcome Katy into the cookery school to share her extensive knowledge on the oyster. Although many people joke that swallowing an oyster is like swallowing a mouthful of salty sea water, the oyster is an extremely versatile ingredient and with Katy's help, we are aiming to educate people about this little understood bivalve. Philleigh Way is all about sharing knowledge and skills handed down through the generations and inspiring people to cook creatively with local ingredients.
