Next generation farmhouse cookery school Philleigh Way has announced an exciting new cheese making course in collaboration with Colliers Cornish Cheese.
The courses will teach students the science behind the art of cheese making and the practical skills required to make cheese at home.
Gone are the days when cheese making was mainly the preserve of the French and a cheeseboard consisted of cheddar, stilton and brie! Consumers are becoming increasingly adventurous and cheese making increasingly fashionable, with artisan cheese makers popping up all over the country. In Cornwall alone there are more than seven cheese producers creating a wide variety of cheeses including the famous Cornish Yarg, Cornish Gouda and Cornish Blue. With the growing food scene in Cornwall reaching new heights and an abundance of high quality Cornish milk available to producers, it is little wonder the demand for more varied flavours and locally produced cheese has prompted the appearance of new creameries around the county.
During Philleigh Way's new cheese making course, specialist tutor Susan Collier of Colliers Cornish Cheese will provide students with real world insight into the art of cheese making. Through a series of demonstrations and hands-on practical sessions, students will learn how to make both soft and hard cheeses, including a "Philleigh Whey" ricotta, all of which they will be able to take home at the end of the day. Resident Philleigh Way chef and fifth generation at Court Farm, George Pascoe will also be on hand to demonstrate a dish that incorporates one of the cheeses made during the day.
George said: "We're really excited about working with Susan and delighted that she's sharing the wealth of knowledge that she's gained from working in some of Cornwall's top creameries. With the incredible variety of cheese available nowadays, there's no end of choice and it's such an exciting ingredient to cook with. The first cheese making course takes place on Wednesday 27th April, 10.00am to 4.00pm and costs £135.00 to include a delicious Philleigh Way lunch with wine.
