Philleigh Way teams up with Naoko Kashiwagi to launch new Japanese cookery course.

Next generation farmhouse cookery school, Philleigh Way has teamed up with Naoko Kashiwagi, to create a new Japanese cookery course.

 

From filleting fish and salt curing to preparing perfect sushi rice, students will learn the art of Japanese cookery from a Japanese native now living in Cornwall.

Japanese cuisine has seen an explosion in popularity worldwide, with more and more people enjoying the fresh flavours and versatility it offers. During the course students will learn how to prepare a variety of traditional Japanese dishes including Okonomiyaki (a traditional filled pancake), tempura prawns with spicy sauce, and California rolls plus two other types of sushi.

Modern sushi bears little resemblance to its earliest form, which dates back to the 1400's and was made by wrapping raw fish in fermenting rice to prevent the fish from spoiling, the fish was consumed and the rice discarded Today, sushi is consumed in many different forms including fish, meat and vegetables to accommodate modern palettes. .

With access to some of the finest fresh fish in the world, what better place to learn how to make delicious sushi and other traditional Japanese dishes than in Cornwall! During this new course, Japanese cookery teacher Naoko Kashiwagi – originally from Tokyo and now based in Truro - will take students on a journey of discovery, teaching them all about her native cuisine, its origins, and how to create new and exciting flavour combinations and textures using one of Cornwall's finest ingredients.

The course covers a wide variety of skills including knife work, curing, searing, rolling sushi, tempura, and preparing traditional Okonomiyaki pancakes. After completing the course, students will have the confidence to prepare a variety of Japanese dishes from scratch in their own home. The first Japanese cookery course on the 15th July has already sold out but further course dates have just been released for the 17th August and 2nd October 2016. The course runs from 11am-3pm and costs £70.00 per person, to include all food and drinks through the day.
