Learn how to Barbecue like a pro
Philleigh Way’s new Weber Grill Academy courses continue in August with two new courses being launched. With American Barbecue on the 20th August and Seafood Essentials on the 27th, Philleigh Way will arm you with the skills to create exciting new recipes on your barbecue. Gone will be the days of burnt sausages and burgers!
On the Seafood Essentials course, you’ll learn skills such as how to grill, bake and smoke fish on the barbecue as well as essential preparations skills. You’ll be shown how to prepare a variety of dishes including smoked mussels with garlic, cream and white wine, seared tuna steak, king prawn kebabs and much more. Students will also be taught how to fillet a whole fish and create mouth-watering fish tacos! A must for both fish and barbecue lovers.
The American Barbecue course will teach students all about the increasingly popular smokehouse cuisine style of cooking. Students will get to work with the Weber Smokey Mountain Cooker to create smoked brisket, as well as preparing a mouth-watering array of American classics such as spicy buffalo wings, mac ‘n’ cheese with truffle, a rack of ribs and even a bourbon and smoked bacon chocolate brownie! Not to be missed if you love all things American!
Japanese Cookery
We’ve teamed up with Japanese native and cookery teacher, Naoko Kashiwai to create an exciting new Japanese cookery course utilising the abundance of fresh fish and shellfish Cornwall has to offer. Japanese cuisine has seen an explosion in popularity worldwide, with more and more people enjoying the fresh flavours and versatility it offers. During this new course students will learn how to prepare a variety of traditional Japanese dishes including Okonomiyaki (a traditional filled pancake) Tempura prawns with spicy sauce and California rolls as well as two different types of sushi. From filleting fish and salt curing to preparing the perfect sushi rice, students will learn a variety of new skills from a Japanese native now living in Cornwall. Chopsticks at the ready!
Woodfired Sessions
Philleigh Way’s popular Woodfired Sessions continue in August and this month sees the return of the hugely popular ‘Krogen’ (Cornish for Shell) nights. For two nights only, resident chef George Pascoe and his team will be cooking up a feast of shellfish including crab cakes, mussels, oysters and lobster. There are also dates for the ‘Best’ (meat) and ‘Pysk’ (fish) Woodfired Sessions during August.
Pasties and Cream
No trip to Cornwall is complete without sampling a Cornish pasty and a cream tea. On this fun short course, chef George Pascoe will teach students how to make a ‘proper’ Cornish Pasty (to his Grans secret recipe – no carrots here!) as well as giving them a lesson in the art of clotted cream making. Students then get to sit down and enjoy a traditional cream tea before heading home with their freshly baked pasties. The perfect day out for summer visitors of those wishing how to master the art of making a ‘proper’ pasty.
