Yumii Patisserie by Darryl Collins is now available at The Arborist Cafe. Darryl is a 2018 Bake Off: The Professionals finalist and Pastry Chef of the Year 2024, bringing refined pastry craft into the cafe setting.
With over 20 years as a dedicated pastry chef, Darryl combines artistic thinking with scientific precision. Predominantly self-taught, he began his career in Newquay before progressing to the Tredragon Hotel in Cornwall, where his aptitude for pastry was quickly recognised, later strengthening that experience with formal qualifications at St Austell College and Camborne College.
Darryl Collins is a highly respected patissier whose career reflects technical excellence and inspirational leadership. Despite profound personal challenges early in life, he found his calling in the kitchen and developed a deep passion for pastry that would shape his future.
His career began in Newquay before progressing to the Tredragon Hotel in Cornwall, where his aptitude for pastry was quickly recognised. Predominantly self-taught, Darryl complemented his practical experience with formal qualifications, completing Levels 1 and 2 at St Austell College and Level 3 in Larder and Patisserie at Camborne College.
Before the COVID pandemic, Darryl served as Head Pastry Chef at Resorts World Birmingham, managing and mentoring a team of eight pastry chefs. In 2018, he reached the finals of Bake Off: The Professionals and successfully mentored a junior team member to win the UK Junior Chocolate Master title. In recognition of his outstanding contribution to the profession, Darryl was awarded Pastry Chef of the Year 2024. He continues to focus on innovation, craftsmanship and developing future talent within the pastry industry.
