Autumn Chef Series: A Night with Adam Smith of Woven

28 November

With The Idle Rocks

For the final weekend of the Autumn Chef Series, Guy Owen welcomes Adam Smith, Executive Chef of Woven by Adam Smith at Coworth Park, one of the UK’s most accomplished modern British chefs. Known for refined, emotive cooking rooted in classical technique and exceptional British produce, Adam brings his signature style to The Reef Knot Restaurant for a one‑night‑only collaboration.

Adam’s philosophy centres on taking the best British ingredients, respecting the classical techniques and flavour combinations that have stood the test of time, and reinterpreting them with precision, creativity and restraint – creating food that “makes people feel something rather than simply trying to impress them”. This collaboration offers a rare opportunity to experience Woven’s elegant, modern British approach in the relaxed coastal setting of St Mawes.

A Taste Of The Evening

This final Autumn Chef Series experience brings Adam’s elegant, expressive cooking to St Mawes. The menu unfolds as a quiet narrative: opening bites that showcase clarity and restraint; a seafood course balancing richness with freshness; a game dish reflecting autumn’s depth and warmth; and a dessert rooted in orchard fruit, honey and floral notes – nostalgic yet elevated through technique.

Expect dishes that feel familiar yet reimagined, shaped by exceptional British produce and Adam’s disciplined, modern approach. It is a thoughtful, emotive culinary journey – the perfect finale to the 2026 Autumn Chef Series.

About Adam Smith

Adam’s culinary journey began at The Ritz, where he progressed from commis chef to executive sous chef over nearly a decade, earning early recognition including Observer Food Monthly Young Chef of the Year and the Roux Scholarship. He later moved to The Devonshire Arms, leading The Burlington Restaurant to achieve four AA Rosettes — the only new restaurant to receive this accolade in the 2015 guide.

In 2016, Adam became Executive Chef at Coworth Park, where his work was distinguished by the Master of Culinary Arts (2017), Hotel Chef of the Year at The Cateys (2018), and a Michelin star that has been retained ever since.

He went on to create Woven by Adam Smith in 2022, a modern British restaurant set within Coworth Park’s 240 acres of parkland. Woven earned a Michelin star in its first year and later achieved five AA Rosettes in 2025, placing it among the most highly regarded restaurants in the UK. Adam also represented the Central region on Great British Menu, winning the fish course at the 2024 banquet in Paris.

Today, Adam is recognised for a style of cooking that is refined, expressive and deeply rooted in classical technique — shaped by nature, memory and an unwavering commitment to flavour.
