Canapés

• Crab and lobster arancini, pickled shallot, dill oil
• Olive, sun blush tomato and basil arancini, pickled shallot, dill oil (VG)

Starters

• Slow cooked game cassoulet, ham crisp, burnt onion aioli
• Sea salt and ginger pressed watermelon, fresh fig, orange, lemon cress (VG)
• Coconut poached sea trout, pineapple and mango salsa, fresh lime, coriander cress

Sorbet

• Cucumber and lemon verbena sorbet, iced cucumber pearls (VG)

Mains

• Chef’s chateaubriand – served for two or individually: prime roast beef fillet, charred sourdough, seasonal vegetables, roasted roots, beets, celeriac purée, truffle jus
• Whole grilled local sole, tartare butter, fine beans, peas, samphire, charred lemon
• Roasted butternut and spinach tart, new potatoes, salt baked beets, confit shallots, toasted seeds, rosemary jus (VG)

Desserts

• Chef’s assiette of desserts: our favourite selection of the year’s puddings to include chocolate, fruits and meringue with accompanying sauces
