Autumn Chef Series: A Wine‑Led Evening with Matthew Mawtus of HIDE
7 November
With The Idle Rocks
For the second weekend of the Autumn Chef Series, Guy Owen welcomes Matthew Mawtus, Director of Food & Beverage at HIDE in Mayfair and one of London’s most respected sommeliers, for an intimate, wine‑led dining experience at The Reef Knot Restaurant.
Rooted in friendship and shared history, this one‑night collaboration brings a slice of HIDE’s refined, modern hospitality to St Mawes. Matt and Guy lived and worked together in London between 2007 and 2009, and the evening is shaped around the vintages that defined that formative time — expressive wines with character, clarity and a strong sense of place, paired with a menu crafted to complement their stories.
Guests will begin with HIDE Signature Negroni and a selection of Chefs Coastal Canapés before settling into a five‑course menu shaped around expressive vintages from the years Matthew and Guy worked together in London.
A Taste Of The Evening
This wine‑led experience brings together Guy’s coastal cooking and Matthew’s sommelier craft in a way that feels both nostalgic and finely tuned. The menu unfolds through a series of courses designed to complement the wines chosen for the night — opening with something light and elegant, moving into a refined fish dish with autumnal depth, followed by a richly comforting main that nods to their shared history. Dessert closes on a timeless classic paired with a beautifully aged sweet wine, before petit fours bring the evening to a gentle finish.
Matthew’s pairings favour clarity, balance and drinkability — wines that feel clean, precise and quietly confident. Expect glasses that speak of place and season, chosen to “season” each dish and bring harmony to Guy’s cooking. It’s an evening shaped by shared history, thoughtful craftsmanship and a genuine love of great wine.
About Matthew Mawtus
Originally from Aberdeenshire, Matthew Mawtus has built a distinguished career across some of London’s most celebrated dining rooms. After graduating from The Scottish Hotel School at Strathclyde University, he joined Gordon Ramsay at Claridge’s as a Sommelier, before progressing to senior roles at L’Etranger, 1 Lombard Street, and Charlotte’s Holdings.
In 2013, Matthew became the opening General Manager of Berners Tavern at The London EDITION, one of the most anticipated launches of the year. He later joined Jason Atherton’s Michelin‑starred Pollen Street Social, where he led the front‑of‑house team to multiple accolades, including 5 AA Rosettes and The Good Food Guide’s Best Front of House.
Matthew joined HIDE in its pre‑opening stages in 2018 and has since progressed to Director of Food and Beverage for the group, helping to secure and maintain its Michelin star. He is the only person to have won both UK Restaurant Manager of the Year and GQ Front of House Personality of the Year, and holds WSET Level 3 alongside certification from the Court of Master Sommeliers.
A Note from Matthew Mawtus
“I feel very honoured to collaborate with Guy on this special event. We’ve been friends for nearly twenty years, and I genuinely believe he is one of the best chefs in the South West. With my family now based in Cornwall — and my brother farming locally — I feel a real connection to the food culture here. I’m excited to bring a slice of HIDE to St Mawes and to work alongside Guy once again.”
